The Pasticciotti area is the beating heart of our headquarters. The pasticciotto, a symbol of our tradition, comes to life from the expert hands of our master pastry chefs.
The process of making pasticciotto is an art that requires precision and passion. Preparation begins with making the shortbread, which must be crumbly and at the same time firm.
Ingredients are carefully selected, from flour to butter, to ensure a perfect, homogeneous base.
Next, we move on to the creams, which will become the soft, creamy heart of the pasticciotto.
Once ready, shortcrust pastry and cream are expertly combined: the shortcrust pastry is rolled out and shaped, accommodating a generous amount of cream inside. The whole is then covered with another layer of shortbread and carefully sealed, one by one.
Martinucci Laboratory’s Rustici area is dedicated to creating the rotisserie specialty that brings up the authentic flavor of Salento. Preparing the puff pastry, which is light and crispy, is the first step in ensuring the goodness of our rustici.
Once the pastry is ready, we move on to preparing the fillings, which vary from the most traditional to the most innovative recipes. The most famous is rustico leccese, which involves a base of stringy mozzarella cheese, fresh tomato sauce, béchamel and pepper.
Each rustico is prepared with extreme care: the puff pastry is rolled out and filled generously, then closed and shaped carefully to keep the filling inside while baking. The shape and size of the rustici are designed to provide the perfect taste experience, enhancing the flavor of the filling and the crispness of the puff pastry.
Martinucci Laboratory’s Almond Paste area is where the Salento confectionery tradition is best expressed through the ancient art of almond processing. This area is dedicated to the creation of specialties that celebrate one of our region’s most beloved and versatile ingredients.
Production begins with the selection of the best almonds hand-picked from trees in our area to ensure freshness and quality. The almonds are processed with precision to obtain a smooth and aromatic paste, which forms the basis of our creations. Making almond paste requires the utmost experience and attention to detail. Our master pastry chefs combine almond paste with sugar and egg whites, kneading until the right consistency is achieved. The preparation is done according to traditional recipes handed down from generation to generation, guaranteeing an authentic product with an unmistakable flavor.
In the area dedicated to Almond Paste, creativity combines with tradition to give life to a wide range of sweets, the most popular of which include: banine, ricciarelli, dried coffee pastries and mustaccioli.
The Mignon area is a world of small confectionery wonders, creativity and technique come together to create a wide range of miniature desserts.
Our pastry chefs work with precision to create classic and modern recipes, each with a distinctive touch. The preparation of the bases, filling and decoration take place according to established techniques that enhance the quality of the ingredients and the refinement of the final product.
In addition to the classics, our Mignon area is constantly experimenting with new recipes and flavor combinations to evolve and always try to please even the most discerning palates.
Each creation is designed to be a small masterpiece, perfect to enhance buffets, special events or simply to indulge in a moment of everyday sweetness.
The Creme area is where our passion for pastry is expressed through the creation of rich and varied creams.
The real queen is undoubtedly custard, a classic and timeless preparation with a rich and velvety flavor. Alongside this, we make chocolate, pistachio and lemon creams, each with its own little distinctive touch, capable of enhancing every dessert it is combined with.
In addition to traditional creams, in the Creme area of Martinucci Laboratory we are proud to offer a line of 100% plant-based creams. Vegan creams are a demonstration of our commitment to innovate and meet the needs of all our customers, while maintaining the high quality of our preparations.
Each cream we produce is versatile and can be used in a variety of desserts: as a filling for cakes, mignons, as a base for spoon desserts and parfaits.
The Cakes area is a place where pastry excellence is at its best.
Our master pastry chefs work with dedication to create fluffy, flavorful bases, then filled with rich, enveloping creams and ganaches. Each cake is a work of culinary art, a perfect balance combining intense and balanced flavors into a unique taste experience.
Among our specialties are crepe cakes: five layers of fluffy crepes wrapped in a unique filling.
The hands and technique of our masters allow for extremely rich and utterly unique decorations, ranging from elegant glazes to the intricate details of freehand designs. Each decoration is crafted with skill and precision.
The Chocolatery area is where chocolate comes to life in a variety of shapes, flavors and textures.
Here, our master chocolatiers work with passion and precision to create high-quality products that delight the senses: pralines, morbidons, bars, spreads, frostings, and recurrence products.
The creativity of our chocolatiers is also reflected in the decorations and finishes of our products. We use advanced molds and decorating techniques to create chocolates that are not only delicious, but also visually appealing.
The Packaging area is a place where each product is enhanced with elegance and care, reflecting the attention to detail that characterizes all our production. Here, our team devotes time and creativity to ensure that each package not only preserves the quality of the product, but is also aesthetically appropriate for any special occasion.
Our attention to packaging aesthetics is evident at every stage of the packaging process. We use high-quality materials and innovative designs. Each package is designed with careful study, considering not only functionality but also visual appearance, to ensure that each product arrives to the customer in perfect condition and with a presentation that enchants.
The Packaging area also specializes in creating thematic packaging for festivities and holidays.
